"Mans" simply means "my" (possession), usually goes with a noun, e.g., "mans zīmējums" (my drawing).
"Manis" is a rather special form related to "mans", it could in certain cases mean "by me" together with a passive form of verb.
For example, "Šis zīmējums ir 'manis' zīmēts" (This drawing is 'by me' drawn). NB! I'm keeping the Latvian word order in translation.

Kas ir starp "man" un "mans" atšķirība? Tos var izmantot pamīšus? Par piemēram, "tas nav mans darbs", "tas nav mans darbs"

Jums ir trīs vārdi šeit: man, mīnu un mans.Pirmie divi (man, raktuves) ir vietniekvārdi: tie aizstās lietvārdiem.Trešais (mans) ir īpašības vārds (daži to sauc determiner): tā izmaina lietvārdus, tas nav aizstāt.

"Es" ir personīgā vietniekvārds. Tas aizvieto "Es", kad tas ir tiešā, netiešā vai prepozicionāls objekts.
Viņa redzēja mani vakar. (tiešais objekts)

Viņa man iedeva grāmatu. (netiešā objekts)

Viņa sniedza grāmatu man. (prepozicionāls objekts)

"Minu" ir piederošs vietniekvārds. Tas nozīmē "no manis" (ouch! ungrammatical!), "Kas pieder man."
"Mana" ir piederošs adjektīvs. Tās nozīme ir tāda pati kā manējā, bet tai ir lietvārds.
Q) kura grāmata ir?
A1) Tā ir mana grāmata. (Ne Tas ir mans.)
A2) Tas ir mans. (Ne Tas ir mans grāmatu.)

Gan A1 un A2 ir gramatikas.

MANIS -we dont use it so often in Latvian,i dont think You should stress about it. :)
e.g. come to me -Naac pie MANIS (double AA means long a,i just dont have Latvian...sorry).
do you miss me? VAI TEV MANIS PIETRUUKST? or VAI ES TEV PIETRUUKSTU?
so it means you CAN choose,to use it or not in some cases...
